Smoked Pork Chops with Redeye Gravy
4 smoked pork chops
1 cup brewed coffee
Slowly fry pork chops on both sides in a cast iron skillet until lightly browned on each side. Transfer to a warm plate.
Add the coffee to the skillet, and, over high heat, boil it down, scraping the pan drippings on the bottom with a wooden spoon. Reduce the liquid to almost a glaze and spoon over the pork chops.
You can serve with eggs, fried cornmeal mush, grits, or whatever you like for breakfast.
