2 pie crust, pricked
1 lb. bacon, snipped into pieces and browned
1/2 lb. Muenster or mozzarella cheese, shredded
4 eggs, beaten
1(12 oz) can evaporated milk
dash of cayenne
1 tsp. dry chives or 1 green onion, chopped
Preheat oven to 450° and pre-bake pie crust.
Place half of the bacon and cheese in each crust. Combine remaining ingredients and pour over top of each pie. Bake for 10 minutes at 450; reduce heat to 350 and cook an additional 15 minutes.
