Rice Crust Quiche

2 C vegetables(your choice)shredded yellow squash, or zucchini,spinach,mushrooms etc.
1/2 C finely chopped onion
11/2 C egg substitute
11/2 C skim milk
1Tbls.flour
1/2 tsp pepper
1/2 tsp salt
2 C fat-free shredded Swiss or Monterey Jack cheese

2C cookedbrown or white rice
2 beaten egg whites
1/4 C parmesan cheese

Mix crust ingredients,pat into 9" deep dish pie pan, bake at 450 degrees for 20 min. Set aside.

Turn oven down to 325 degrees.

Saute veggies, except mushrooms, in a small amount of water.

Drain,pat out extra liquid.

Combine milk, flour, egg sub., salt,and pepper.

Stir in cheese and veggies,pour into crust.

Place pie plate into 1" water bath in larger pan.

Bake for 60-65 min,or until a knife comes out clean.
