Twice Baked Goat's Cheese Souffle
80g butter
60g plain flour
350ml warm milk
75 g fresh goats cheese (or feta if you can't get fresh), crumbled
1 tblsp of freshly grated Parmesan cheese
2 tablsp chopped parsley
3 egg yolks
4 egg whites
2 cups of cream
Preheat oven to 180c.
Grease 6 souffle and place them in a large baking dish lined with a tea
towel.
Melt butter then stir in flour and cook for two minutes with out browning.
Add warm milk and bring to boil stirring, reduce heat and cook stirring
for 5 min.
Add cheeses and parsley. Allow to cool for a few minutes.
Fold in yolks and season.
Whisk whites till they are beginning to firm and lightly fold in whites
into mixture.
Divide mixture into prepared containers.
Fill pan with boiling water 3/4 way up sides of souffle pans.
Bake for 20-30 minutes, until souffles are firm and well puffed.
Allow to rest for a minute then turn out onto flat casserole dish in one
layer. (Can be refrigerated for up to 24 hours at this point.)
When ready to serve, preheat oven to 180c.
Pour 1/3 cup of cream over each and return and bake for 15 min.
Optional garnishes: Fresh tomato sauce and green garnish.
