Belgian Waffles
1 pk. Dry yeast
1/4 cup sugar
2 1/2 cups lukewarm milk
3 cups all-purpose flour
1/8 tsp. salt
2 egg yolks
1 tsp. vanilla
7 Tbs. unsalted butter, melted and cooled
2 egg whites
Confectioners sugar
1-cup heavy cream whipped
1 pint fresh strawberries, washed and hulled
Sprinkle yeast and a pinch of sugar over 1/2 cup of lukewarm milk.
Sift the flour, sugar, and salt into a bowl. Pour in the yeast mixture
and the remaining milk, stir until smooth.
Then stir in egg yolks, vanilla and melted butter.
Cover bowl loosely with a towel and let rise for 30 minutes.
Heat a waffle iron to medium temperature. Beat the egg whites until stiff
and gently fold into batter.
Put about 1 1/2 cups batter in the waffle iron and bake for about 5
minutes or until golden brown.
Serve sprinkled with
confectioner's sugar, accompanied by whipped cream and strawberries.
Makes 6 waffles
