Chocolate Waffles
2 c flour, sifted
3 tsp baking powder
1/2 tsp salt
6 tbsp sugar
2 eggs - separated
1 1/2 c milk
4 tbsp shortening
2 (1 oz) squares, chocolate
Sift flour before measuring.
Add other dry ingredients and sift together.
Beat egg whites until stiff, set aside.
Beat egg yolks, then add milk.
Pour this into sifted dry ingredients.
Melt shortening and chocolate together, then add to batter.
Stir just enough to moisten dry ingredients.
Add beaten egg whites.
Bake in a preheated waffle iron for 5 or 6 minutes -
Notes: If your iron has a temperature adjustment, these will be better if not baked as hot as a traditional waffle.
Serve hot with whipped cream or ice cream.
Makes 5 or 6 waffles.
