You will need 3 bowls and a waffle iron, plus a heavy fork, and spatula,
a small hand mixer is handy too.
Waffles
3 cups flour
1 Tbsp Baking Powder
pinch salt
2 1/2 cups milk
1/2 cup oil, canola or other favorite variety
2 egg yolks
2 egg whites
1 Tbsp sugar
Preheat your waffle iron, spray lightly with Pam.
In a large bowl, combine the flour, baking powder and salt, stir with a fork to combine.
In a batter bowl, or other large enough container, combine the milk, oil and egg yolks, stir to combine.
In a third, very clean bowl, whip the egg whites until frothy, add the sugar in a slow stream and whip to a stiff peak, but still very glossy.
Pour the milk into the flour and stir with a fork until all moistened, immediately and lightly fold the whites into the mixture.
You don't have to be as gentle as with a sponge cake, but this process is what makes the waffles so light and tasty. Scoop or pour the right amount, depending on your iron size, and cook until they are a medium golden.
Use immediately, or keep warm in your oven, preheated to 300 F or even in your toaster oven.
