Beans with Rice
From Fix it and Forget It: Feasting with your Slow Cooker, Ranck & Good, Contibuted by M. Christophel
3 cups dried small red beans
8 cups of water
3 garlic cloves, mined
1 large onion, chopped
8 cups of fresh water
1-2 ham hocks
1/2 - 3/4 cup ketchup
2 tsps salt
pinch of pepper
1 1/2 - 2 tsps ground cumin
1 Tbsp parsley
1 - 2 bay leaves
Soak beans overnight in 8 cups of water. Drain. Place soaked beans in slow cooker with garlic, onion and 8 cups of fresh water and ham hocks. Cover: cook on high 12 - 14 hours.
Take ham hocks out of cooker and allow to cool. Remove meat from bones. Cut up and return to slow cooker. Add remaining ingredients. Cover and cook on High for 2-3 hours. Serve over cooked rice with dollop of sour cream. Makes 8 Servings
Note: if you want to make this vegetarian delete the ham hocks and use low sodium vegetable broth in stead of the " 8 cups of fresh water" to cook beans in crock pot.
I also would place a small amount of some shredded purple cabbage, gold cheddar cheese and green onions for Mardi Gras Colors.
