Jambalaya Shrimp and Chicken

Shrimp and Chicken Jambalaya

2 slices bacon or 1/4 c fresh hot sausage sliced into 1/4 inch slices
1/4 cup onion
1 diced green pepper
1 T flour
1 cup diced or crushed tomatoes
3/4 c water
3/4 c water
3 cups cooked rice
2 cups died cooked, chicken
1 cup cooked, peeled, cleaned shrimp
1/4 t dried thyme or several sprigs of fresh thyme
1 bay leaf
Worchestershire sauce
1 t hot pepper flakes
1/4 c finely chopped parsley
salt and pepper

Saute bacon or sausage. Add onion, pepper and celery and cook until tender.

Stir in the flour(off the heat). Return to heat and add the tomato and water.

When this begins to boil add the rice, chicken, shrimp, thyme, bay leaf, and pepper flakes. Adjust the seasonings to your taste with worchestershire sauce, salt and pepper. Stir over very low heat for 10 minutes.

Sprinkle with parsley and serve.
