Cajun Fried Rice

1 cup Uncle Ben's Converted Rice
2 tablespoons olive oil
2 tablespoons tomato sauce (or ketchup)
1 teaspoon Creole Seasoning
1/2 teaspoon salt
1/2 pound diced smoked sausage
6 chopped green onions
1/2 cup diced celery
1/2 cup diced bell pepper


In a saucepan saute the rice in the oil til brown.

Combine the tomato sauce and Creole Seasoning with 2 cups of water. Add to the rice and bring to a boil. Reduce the heat to a low simmer and cook covered for 25 minutes. Remove the rice from the heat and let rest for 5 minutes.

In a large skillet saute the sausage rendering some fat. Add the green onions, celery and bell pepper (add a little oil if necessary) and saute til the sausage is crispy brown. Add the rice and fry until the dish is heated through and all of the dripping from the sausage are absorbed by the rice.

For a one-dish meal add sauteed chicken and/or fried large slices of sausage.
