From La. Real and Rustic- Emeril Lagasse

1-1/2 sticks butter (6oz)
4 cups chopped onion
2 cups chopped bell pepper
2 cups chopped celery
2 tsp. chopped garlic
2 lb. med. shrimp, peeled and deveined
2 tsp. salt
1/2 tsp cayenne
2 tbl flour
2 cups water
6 tbl chopped parsley
1/2 cup chopped green onion

1. Melt butter in a large skillet over med. heat. Add the onion, bell pepper, and celery, and saute until soft and
golden, about 10 min. Add the garlic and cook 2 min. Add the shrimp, salt, and cayenne and cook for about 4 min.,
or until shrimp turn pink.

2. Dissolve the flour in the water and add to the shrimp mixtrer. Stir until the mixture thickens slightly. Reduce heat to med-low and simmer for 6-8 min, stirring occasionally. Add parsley and green onions. Stir and cook for about 2 min. more.
