Bundt: Pistachio Cake

Pistachio Cake

1 pkg. yellow cake mix -- ( 2-layer size)
1 pkg. instant pistachio pudding mix -- (4-serving size)
4 eggs
1 c.water
1/2 c. vegetable oil
1/2 t. almond extract
green food coloring -- opt.

for Marble Variation:
3 T. cocoa


Grease and flour a 10" bundt or tube pan. Preheat oven to 350 degrees.

Combine cake mix, pudding mix, eggs, water, oil, and almond extract in large mixer bowl. Blend, tint pale green if desired. Beat at medium speed 2 minutes. Pour batter into prepared pan and bake for 50 minutes, or until cake tests done. Cool 15 minutes before removing from pan. Cool completely. Frost with lemon or lime flavor glaze.

After batter is mixed, pour 1/3 of batter into a separate bowl. Stir in cocoa. Pour all of the green batter into the prepared pan. Spoon chocolate batter on top in large spoonfuls. Zigzag spatula through batter to marble. Bake as directed. Frost with Chocolate Glaze
