Carrot Cake
3 cups grated carrots
4 eggs-unbeaten
2 cups sugar
1 1/2 cups oil
2 tsp. baking soda
1/2 tsp. Salt
2 cups flour
1 tsp. Vanilla
1 cup chopped walnuts
Combine carrots, eggs and oil and beat well. Add all other ingredients and mix throughly. Pour into a 9x13 pan or 2 round cake pans. Bake @ 350 for 40-45 minutes
Cream cheese frosting:
1 8oz cream cheese softened
1 1/2 cups confectionary sugar
small amount of milk
Beat cream cheese and sugar and whip until fluffy adding tiny amounts of milk if needed. Ice cake. Refrigerate after icing.
