30 Day Friendship Cake with Starter

30 Day Starter Mix for friendship cake:
3/4 cup canned peaches, drained and cut in pieces
3/4 cup pineapple chunks, drained
6 maraschino cherries, halved
1 1/2 cups sugar
1 pkg. active yeast


Mix all ingredients together and place in glass container with loose cover at room temperature. Stir 2 or 3 times the first day and once a day thereafter. At end of 2 weeks, the starter is ready to use to make 30 day cake.


Friendship Cake Starter:
1/2 cup starter
2 1/2 cups sugar
1 large can sliced peaches and juice


Mix once a day each day (for 30 days) with wooden spoon.



2 1/2 cup sugar
1 large can chunk or crushed pineapple and juice

On the 10th day add 2 1/2 cups sugar and 1 large can pineapple and juice.


2 1/2 cup sugar
1 large can fruit cocktail and juice
1 (10 oz.) can chopped maraschino cherries and juice

*On the 20th day~~ add 2 1/2 cups sugar, 1 can maraschino cherries with juice and 1 large can fruit cocktail with juice.

*On the 30th day~~ drain liquid from fruit. Divide juice into 1 1/2 cups starter. Place in airtight containers and give to friends as soon as possible. Should be used within 3 days. Divide fruit into thirds. Makes 3 cakes (or 1 1/2 cups of mixture in 4 cakes). Do not refrigerate juice or fruit mixture.



Friendship Cake:
1 yellow cake mix
2/3 cup oil
4 eggs
1/3 of fruit or 1 1/2 cup for 4 cakes (starter)
1 cup chopped nuts
1 box vanilla instant pudding (coconut or pineapple is good)


Preheat oven to 350 degrees.

Mix all together in one bowl. Bake in greased tube or Bundt pan at 350 degrees for 50 to 60 minutes. Can beat fruit in with other ingredients or fold in. One cake may be made into 3 loaves. For loaves, it's better to chunk up peaches; use pineapple tidbits, half cherries and grapes in fruit cocktail.

These cakes freeze well, with or without icing!



Icing for Friendship Cake:
1 cup sugar
3/4 cup milk
3/4 stick butter


Boil together for 5 minutes. Pour over cake while warm.
