Cake Ambrosia Orange Roll

Ambrosia Orange Roll Cake

4 eggs separated
3/4 cup sugar
1/4 teaspoon almond extract
1 cup sifted self rising flour
Confectioners' sugar
1 3 3/4 ounce package orange flavored pudding mix
1 11 ounce can mandarin oranges drained
1 cup coconut
1 cup heavy cream, whipped

Preheat oven to 375.

Beat egg whites until foamy, then beat in sugar, 2 tablespoons at a time, until shiny peaks form. Set aside.

Beat egg yolks until thick and lemon colored; blend in almond extract.

Fold into beaten egg whites; sift flour, 1/4 cup at a time over egg mixture, folding in gently after each addition.

Turn batter onto waxed paper lined 10 x 15 inch jelly roll pan.

Bake for 12 minutes or until cake springs back when lightly touched.

Remove from oven and loosen edges of cake and turn out onto clean towel,
dusted with confectioners' sugar; remove waxed paper.

Roll up cake and towel, jelly roll fashion, beginning at narrow end.

Cool completely on wire rack.

Prepare pudding mix according to instructions on package; refrigerate.

Reserve about 12 orange segments.

Combine cooled pudding with remaining orange segments and coconut.

Unroll cake and remove towel.

Spread cake with pudding mixture.

Reroll; garnish with whipped cream and reserved orange segments.

Chill until ready to serve.

Yield 12 servings.
