Apple Cake

5 apple -- sliced
5 Teaspoons cinnamon
1/3 Cup sugar
1/2 Cup orange juice
1 Tablespoon vanilla
5 egg
1 Cup vegetable oil
2 Cups sugar
3 Cups flour
1 Teaspoon salt
2 Teaspoons baking powder
Grease 10" tube pan. Preheat oven to 350 degrees.
Peel, core and slice apples. sprinkle with cinnamon and sugar and set aside.
Beat together orange juice, vanilla, eggs and oil. Gradually beat in sugar, flour, salt and baking powder. When batter is smooth, continue beating for few minutes. Pour 1/3 batter into pan. Add 1/3 apples. Repeat twice.
Cook cake in 350 oven for 1 hour and 15 minutes (check after 1 hour) or until firm and golden and begins to pull away from the pan. Leave to cool, then turn out to cool completely.
