APPLE CAKE:

Sift together the following and set aside:

3 cups plain flour
1 1/2 tsp. soda
1 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. salt

In another bowl, combine the following:

2 beaten eggs
2 cups sugar
1 1/4 cup oil
1 tsp. vanilla

Stir the above two mixtures together well. Fold in 3 cups of peeled, thinly sliced red delicious apples and 1 cup of chopped pecans. Pour mixture into a greased and floured bundt pan or two loaf pans.

Bake at 350 degrees for 1 hour and 15 minutes, or until done, testing with a knife.

NOTE: This is a very moist cake and does not call for icing, but I'm sure you could sprinkle it with powdered sugar or add your favorite icing, if desired. Although if it's as hot where you are as it is here in Texas this week (Almost 100 degrees every day), you might prefer to leave the icing off!
