Fresh apple cake
11/2c oil
2c sugar
2 eggs
1 tsp soda
1 tsp salt
11/2 tsp cinnamon
3c chopped peeled apples ( I use Granny Smith)
3c flour
1c chopped toasted pecans
Mix oil,sugar,eggs.Add dry ingredients.Mix well,add apples and nuts, bake in a bundt pan,at 350,for 50-60 min.
Frost with caramel icing.
Caramel Frosting
1/2c butter
1c brown sugar
4Tbls milk
3c powdered sugar
1/2 tsp vanilla
Melt butter,add brown sugar,cook over low heat until boiling,cook for 2 min,stirring constantly.Add milk continue cooking until it comes to a boil.Remove from heat gradually add powdered sugar.Add vanilla beat well.You may need to thin with a little milk.
