Bailey’s Irish Cream Cake
2 c. chocolate wafer crumbs
1/8 tsp. cinnamon
1/8 c. butter
8 oz. pkg. cream cheese
1 c. sugar
1 tsp. vanilla
3 eggs
1/3 c. Bailey's Irish cream
liqueur
3 c. heavy cream
Combine crumbs, cinnamon and butter. Press into spring-form pan to form crust. Chill 2 hours.
Beat cream cheese and sugar. Gradually add vanilla and eggs. Blend. Stir in Irish Cream and heavy cream. Mix and pour into crust. Bake at 350 degrees for 1 hour. Cool. Refrigerate overnight.
Serves: 6 to 8.
