Banana Cake

1/2 cup soft margarine or butter
1 1/2 cups white sugar
2 eggs (beaten)
1 tsp vanilla
1 cup mashed banana
1/3 cup buttermilk
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt


Preheat oven to 350 degrees.

Cream butter and sugar together. Beat in the eggs and add vanilla.

Mix the banana with buttermilk.

Blend the dry ingredients into the liquid mixture. Spread in 2 greased round 8 inch layer pans. Bake 25 to 35 mins or until a tooth pick inserted comes out clean. Cool and frost with butter icing or peanut butter icing.


Peanut Butter Icing:
1/4 cup butter
1/4 cup peanut butter
1/2 tsp vanilla
1/8 tsp salt
2 cups powdered sugar
3 tbsps milk


Combine all ingredients in a bowl. Beat until smooth and spread over the cake.

Butter Icing:
2 cups powdered sugar
1/4 cup butter
3 tblp milk
1 tsp vanilla


Blend the ingredients together until smooth and then spread over cake.



Banana Cake

2 1/4 c flour
1 1/4 c (superfine/caster)sugar 2 1/2 t baking powder
1/2 t baking soda
1/2 t salt
1/2 c unsalted butter -- softened
1 1/2 c mashed very ripe bananas (The skin of banana should be black.)
2 eggs
1 t vanilla


Mix together the flour, sugar, baking powder, baking soda and salt. Sift into large mixing bowl. Add softened butter, 1/2 cup bananas and eggs. Beat 2 min. Add remaining bananas and vanilla. Beat 1 min.

Bake in 2 well-greased 8" round cake pans at 375 degrees for 25 min. Frost with cream cheese frosting.


Cream Cheese Icing: (optional)
1/2 lb. powdered sugar -- sifted
1/4 c unsalted butter -- softened
8 oz. cream cheese -- softened
1 t vanilla


Cream Cheese Icing: Beat together well, all ingredients. Spread on cooled cake.


Banana Cake
From a cookbook from an Amish restaurant in Indiana.

1 cup oil
2 cups sugar
3 eggs
2 cups mashed banana
3 cups four
1 tsp. soda
1 tsp. salt
2 tsp. baking powder
1 tsp. cream of tartar
2 tsp. vanilla
chopped nuts to taste


Cream sugar and oil. Add eggs and beat well. Stir in bananas. Add the remaining ingredients. Bake in a 13x9" pan for 30-35 mins. at 350*. Frost with Cream Cheese Frosting.


Banana Cake with Banana Topping

1 1/2 cups sugar
1/2 cup butter
2 eggs
2 cups flour
1/2 tsp. salt
1/2 tsp. baking powder
3/4 tsp. baking soda
2 tsp. vanilla
3/4 cup sour milk (you can "sour" the milk with 1 Tbsp. vinegar)
1 cup bananas
1 cup chopped nuts (I usually use walnuts)


Cream together sugar and butter. Add eggs and beat well. Stir together flour, salt, baking powder and baking soda. Add flour mixture to creamed mixture alternately with milk and beat well. Add vanilla, bananas and nuts and beat well.

Pour into greased and floured pans (either a 9x13-inch or 2 (9-inch) square or round pans). Bake at 350 degrees for 30-35 minutes or until center of cake springs back when lightly touched. Pour topping on cake while still warm.


TOPPING:
2 cups powdered sugar
1 tsp. vanilla
1 cup mashed bananas


Beat all ingredients together until smooth and pour over top of cake.



Banana Cake with Pineapple and Pecans

1 cup butter, softened
2 cups sugar
3 eggs, beaten
1 tsp. vanilla
1 cup mashed bananas
1/2 cup crushed pineapple, drained 1 tsp. baking soda
1 cup buttermilk
1 tsp. baking powder
3 1/2 cups flour
1/4 tsp. salt
1/2 cup chopped pecans


Cream butter and sugar. Beat in eggs and vanilla. Blend in mashed bananas and pineapple. Dissolve soda in buttermilk and set aside. In separate bowl sift together baking powder, flour and salt. Blend dry ingredients into banana-egg mixture alternately with buttermilk. Beat well. Add chopped pecans. Pour into a 9x13 pan and bake in 350 F oven 30-40 minutes.
