Bet’s Orange Cake

1 cup sugar
4 eggs
250 g. (1/2 lb.) butter, melted
rind and juice (1/3 cup) orange
1 cup plain flour
2 tsp. baking powder
3/4 cup orange juice, extra
2 tbs. (20 g. tablespoons, U.S are 15 g.) sugar, extra


Preheat oven to 350 degrees F./180 degrees C.

Beat sugar and eggs until thick. Add butter, rind and juice, sifted flour and baking powder, mix lightly. Pour into cake pan and bake in a moderate (180°c/350°f) 45 – 50 minutes.

Mix extra sugar and juice. When cake is done pour mixture over cake. Allow to cool. Ice.
