BETTER THAN (with a yellow cake mix.)
18 1/2 ounce pkg. yellow cake mix
20 ounce can crushed pineapple
1 cup sugar
6 ounce pkg. vanilla pudding mix (or choc.)
1 cup whipping cream, whipped and sweetened
Flaked coconut, lightly toasted
Prepare cake according to pkg. direction, in a 9 x 13 inch baking pan. Combine crushed pineapple and sugar in a saucepan and bring to a boil. Cool slightly. When baked cake has cooled, poke holes in it with a fork.
Pour pineapple mixture over it. Prepare pudding mix according to package directions and let cool. Spread prepared pudding over top and chill.
Just before serving, cover with sweetened whip cream and sprinkle with toasted coconut. If you like, garnish with pineapple slices. Serves 12 to 16.
