Blackberry Roll

2 1/4 cups flour
3/4 cup sugar -- plus 2 T
1 1/2 teaspoons salt
1/2 pound unsalted butter -- cut into small bits
4 1/2 tablespoons ice water
4 cups blackberry
2 tablespoons unsalted butter -- melted
1/2 cup hot water

Preheat oven to 450.

Put flour, 2 T sugar, salt and three fourths of butter in a food processor. Process to a coarse texture. Add ice water and continue to process until ixture is just beginning to form a ball.

Remove it, make it into a ball, and place between 2 sheets of wax paper, pressing the ball flat before refrigerating it.

Combine 3 cups of berries and remaining 3/4 cup sugar and set aside.

Roll out dough on a floured surface to the thickness of a piecrust. Cut out a rectangle about 15x9". Discard any leftover dough. Brush dough with melted butter and spoon on berries.

Roll up as you would a jelly roll. Place this,seam side sown, in a greased baking dish. Cut several diagonal slits in the top of the roll. Sprinkle the top with additional sugar and then arrange remaining berries around the roll

Bake at 450 for 10 minutes, then pour hot water around the roll. Turn the heat to 350 and bake for another 45 minutes. Serve slices with juice on the top.
