Blarney Stones
cake:
5 eggs (hold back 2 egg whites)
3 cups sifted flour
3 tsp baking powder
dash of salt
1 cup warm water
1 tsp vanilla
2 cups sugar
Icing:
1 lbs butter
1 lbs powdered sugar
1 tsp sugar
ground peanuts or pecans
Preheat the oven to 350F. Grease and flour a 9X13 cake pan.
Beat the eggs until they are very light. Gradually add the sugar and mix well. Sift together the flour, baking powder and salt. Beat a little of the flour mixture into the egg mixture. Beat in all the water. Beat in the remaining flour mixture and the vanilla. Mix well. Pour into the greased and floured pan and bake for 35 minutes. When done remove from oven and let cool completely.
Icing: Cream together the butter and powdered sugar. Add the vanilla and 2 egg whites beating until light.
Cut the cooled cake into 1 inch squares. Frost squares on all sides and roll in ground nuts. Set on waxed paper to until firm. May be eaten at once of frozen.
