BOTERKOCK
(Dutch Butter Cake)
Preheat oven to 325*F
Grease and flout 1 bundt pan
Ingredients~
1 cup butter - at room temperature
2 cups sugar
5 eggs - at room temperature
2 cups flour
2 teaspoons baking powder
1 teaspoon vanilla essence
1/2 teaspoon lemon extract
1 cup powdered sugar
Method~
Cream the butter and sugar. Add the eggs, one at a time, beating well after each addition. Sift the flour and baking powder together and blend into the butter/sugar mixture.
Stir in the vanilla essence and the lemon extract. Spoon into prepared cake pan. Bake in oven for 1 hour or until done. Cool for 5 minutes before removing from pan.
Sprinkle top of cake generously with powdered sugar while still warm.
