CARAMEL APPLE CAKE
Cake:
2 cups all-purpose or unbleached flour,
lightly spooned into measuring cup and then leveled off
1-3/4 cup brown sugar, firmly packed
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon soda
3/4 cup butter or margarine, softened
1-1/2 teaspoons vanilla
3 eggs
2 medium apples, peeled and thinly sliced (2 cups)
1 cup nuts, chopped
1/2 cup raisins
Glaze:
1/4 cup butter or margarine
1/4 cup brown sugar, firmly packed
1-1/2 cups powdered sugar
1 teaspoon vanilla
2 to 4 teaspoons milk
2 to 3 tablespoons nuts, chopped
Preheat oven to 350 °F. Generously grease a 12-cup Bundt pan with 1 tablespoon solid shortening, then dust with
flour.
In large bowl, blend all cake ingredients (except nuts and raisins) and beat 2 minutes at high speed. Stir in nuts and
raisins.
Spoon into Bundt pan. Bake until toothpick comes out clean (45 to 55 minutes, but increase by 5 minutes or igh-altitude baking above 3500 feet.) Cool upright in pan for 30 minutes, then invert onto serving plate and cool completely.
Meanwhile, melt butter, stir in brown sugar, and remove from heat. Add powdered sugar, vanilla, and milk. Blend well.
Immediately spoon over cake and sprinkle with nuts.
