Carrot Cake (High Altitude)

3/4 to 1 cup oil
1 1/2 cups sugar minus 2 tablespoons
4 eggs
2 1/2 cups flour
1 1/2 tsp. baking soda
2 tsp cinnamon
1 cup crushed pineapple and juice
2 3/4 cups shredded carrots
1 cup chopped walnuts
Frosting (recipe below)


Preheat oven to 350.

Mix ingredients in order listed.

Bake in a greased and floured 9 inch by 13 inch cake pan at 350 degrees F for 40 minutes.


Frosting:
1 package ( 3 oz.) cream cheese, softened
2 tablespoons butter or margarine, softened
3/4 cup powdered sugar
2 tsp. milk
1/2 tsp vanilla


Mix all ingredients together until smooth, adding more sugar and milk, if necessary.
