Carrot Cake

1 3/4 cups flour
1 1/2 cups sugar
1/2 cup oil
3 eggs
1 cup canned crushed pineapple
1 cup coconuts
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon
2 cups shredded, carrots
1 cup chopped walnuts
1 teaspoon vanilla


Beat together eggs, sugar, vanilla and oil. Stir in flour, salt, baking soda, and cinnamon. Fold in drained pineapple, coconut, carrots and walnuts. Grease a bundt cake pan or a 13"x 9"x 2" pan. Bake at 350 degrees for 60 minutes. Cool completely.



Cream Cheese Frosting:
8-oz cream cheese
1/2 cup softened butter
2 tsp. vanilla
1 box confectioners sugar


Cream together first 3 ingredients. Stir in sugar until smooth.
