Carrot Cake
recipe from Nancy Kohrs

1 cup vegetable oil
1 1/2 cups sugar
3 eggs
2 cups flour
2 tsp. baking soda
2 tsp. cinnamon
1 cup crushed pineapple and juice
2 cups shredded carrots
1 cup flaked coconut
1 cup chopped nuts
scant tsp. salt


Preheat oven to 350 degrees F.

Mix oil, sugar and eggs. Add remaining ingredients. Pour into a greased 9 x 13 inch cake pan. Bake 50 minutes at 350 degrees.


Frosting:
1 package ( 8 oz.) cream cheese, softened
2 tbsp. milk
1 tsp. vanilla
16 ounces powdered sugar
