Carrot Cake

11/2 cups salad oil
1 cup honey or brown sugar
2 cups flour
2 tsp. each baking powder and soda
2 tsp. cinnamon
1/2 tsp. allspice
1 tsp. salt
2 cups shredded carrot
1/2 cup nuts
1/2 cup coconut
1 cup crushed pineapple - undrained


Mix in order given and bake at 350 for 60-70 mins. (use large loaf pan or an 8 inch springform pan)


Frosting:
1 large package cream cheese (16 oz) (450 grams)
3 cups icing sugar
1/2 cup butter (no substitutes)
1/2 tsp. vanilla


Cream the cheese until soft and fluffy , beat in the butter, blend in the vanilla then gradually mix in the icing sugar to the consistency you desire. If it's a bit stiff you can add a wee bit of cream or milk.
