Carrot Cake

4 Eggs
2 cups Sugar
1 1/2 cups Oil
2 cups Flour
2 tsp Baking powder
1 tsp. Soda
1/2 tsp. Cloves
1 tsp. Allspice
2 tsp. Cinnamon
1 tsp. Nutmeg
1/2 tsp. Salt
1 tsp. vanilla
1 cup Raisins
1 (20 oz.) can Crushed Pineapple, well drained
2 cups Grated Carrots
1/4 cup Pineapple Juice


Preheat oven to 350 degrees F.

Beat eggs until frothy, add the sugar and oil, beat until light. Add the dry ingredients which has been sifted together. Mix well. Add the pineapple juice to mixture. Combine carrots, pineapple, vanilla, raisins, add to batter mixture, mix well.

Pour into a 9 X 13 greased pan. Bake 50-60 minutes or until toothpick comes clean when testing.
When cake has cooled add your favorite cream cheese icing on top of the cake, sprinkle with a little toasted coconut, take a fork and zig-zag lines through cake for a fancy look.

Another nice idea you can do when it's Christmas, is take 2 small bags with a little coconut in each bag, then add red food coloring to one bag and green to the other, shake and sprinkle this on the cake.
