Carrot Cake from a Cake Mix
1 package yellow cake mix
1/2 t. ground nutmeg
1 pkg. instant vanilla pudding mix.
1/4 t. ground cloves
4 eggs.
1-1/2 C. shredded carrots
1 C. water
1 C. yellow raisins, soaked in water to plump
1/3 C. vegetable oil
3/4 C. crushed, well-drained pineapple
1 t. ground cinnamon
1 C. chopped nuts
Preheat oven to 335. Grease and flour two 8" round pans.
Combine cake mix, pudding mix, eggs, water, oil, and spices in a large bowl. Beat at medium speed with electric mixer for two minutes.
Stir in carrots with a spoon, just to mix; then raisins, then pineapple, and finally nuts.
Pour immediately into prepared pans and bake for 35-45 minutes. Check with toothpick or cake tester.
Frost with your favorite cream cheese frosting.
