Best carrot cake
2c flour
2tsp soda
1/2 tsp salt
2 tsp ground cinnamon
3 eggs
2c sugar
3/4 c oil
3/4 c buttermilk
2 tsp vanilla
2 c grated carrot
1(8oz) can crushed pineapple
11/4 c chopped pecans(toasted)
buttermilk glaze
Cream cheese frosting

Line three 9" round pans with waxed paper;grease and flour,set aside.Stir together first 4 ingredients.Beat eggs and next 4 ingredients until smooth.

Add flour mixture,beating at medium speed until blended.Fold in nuts.pour into pans.Bake at 350 degrees for 25-30 min.until it tests done.

Drizzle glaze evenly over layers;cool in pans 15 min.,remove from pans,cool completely. Spread frosting between layers and on top and sides of cake.

Buttermilk glaze
1 c sugar
11/2 tsp soda
1/2 c buttermilk
1/2 c butter
1 tbls light corn syrup
1 tsp vanilla
Bring first 5 ingredients to boil.Boil,stirring often,for 4 min.Remove from heat,add vanilla.

Cream cheese frosting
3/4 c butter (softened)
2 (8oz) blocks cream cheese (softened)
3 c powdered sugar
11/2 tsp vanilla
Beat first 3 things until smooth,add powdered sugar and vanilla;beat until smooth.
