CARROT CAKE WITH CREAM CHEESE ICING

2 C. flour
2 t. cinnamon
1 t. baking powder
1/4 t. salt
2/3 C. softened butter
1 C. granulated sugar
3 large eggs
2/3 C. milk
3 medium carrots, grated
1/2 C. coarsely chopped walnuts

Icing
1/2 C softened butter
4 ounces softened cream cheese
1 t. vanilla
2 1/2 C. confectioners' sugar

Topping
1/4 C. finely chopped walnuts
2 T. firmly packed light brown sugar

Preheat oven to 350. Grease and flour a 9" round cake pan.
Mix dry ingreds. Cream butter and sugar. Add eggs one at a time, beating well after each. At low speed, alternately beat dry ingreds. and milk into butter mixture. Stir in carrots and nuts.

Bake about 40 minutes or until top springs back when lightly touched. Cool on rack for 10 minutes, remove from pan and cool completely on rack.

To prepare icing beat together butter and cream cheese until smooth. Beat in vanilla. Beat in confectioners sugar.

To prepare topping, mix together nuts and brown sugar.
