Carrot Cake With Caramel Icing

3 cups shredded carrots
1 1/2 cups oil
2 cups sugar
4 eggs
2 cups flour
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. baking powder
1 cup walnuts
Caramel Icing (recipe below)


Preheat oven to 350.

Grease and flour a Bundt pan.

Blend together dry ingredients; set aside.

Combine oil and sugar until well-blended.

Add eggs one at a time, mixing well after each.

Add flour mixture and mix well.

Add carrots and then walnuts.

Pour into prepared Bundt pan.

Bake for one hour.


Caramel Icing

2 cups white sugar
2 sticks (1 cup) margarine
1 cup evaporated milk
1 tablespoon vanilla

In a saucepan, mix sugar, margarine and milk together over low heat until margarine is melted.

Remove from heat and let stand for one hour.

Cook on low heat to softball stage stirring constantly.

Beat icing until it creams; add vanilla.
