Carrot Cake
2 cups sugar
1 1/2 cups vegetable oil
4 eggs
2 cups flour
1/2 cup pecans - chopped
1 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
3 cups finely grated carrots
Icing:
8 oz. cream cheese - softened
1 lb. powdered sugar
1 stick butter - softened
2 tsp. vanilla
Combine sugar & oil. Add eggs, mix well. Mix in flour, cinnamon, soda & salt. Slowly mix in carrots & nuts.
Pour into a greased 9X13" pan. Bake at 300 for 45-60 min. or until done.
For icing mix cream cheese & butter. Add powdered sugar & vanilla. Ice the cake & keep refrigerated.
