Cake Chocolate Oatmeal

Chocolate Oatmeal Cake

1 1/4 cups boiling water
1 cup quick cooking rolled oats
1/2 cup butter or margarine
4 ounce package German sweet chocolate broken up
1 1/2 cups all purpose flour
1 cup sugar
1 cup packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 eggs
1 cup packed brown sugar
6 tablespoons butter or margarine
1/4 cup milk
2 cups flaked coconut


Preheat oven to 350° F and grease and lightly flour a 13 x 9-x 2-inch baking pan, set aside.

In medium bowl, pour boiling water over rolled oats, add 1/2 cup butter or
margarine and chocolate.

Let oatmeal mixture stand 20 minutes, stir till well combined.

In large mixer bowl, stir together flour, sugar, 1-cup brown sugar, baking soda and salt.

Add eggs and oatmeal mixture, beat at low speed of electric mixer till well combined.

Turn batter into prepared pan.

Bake for 35 to 40 minutes or till cake tests done.

While cake is baking, prepare coconut topping.

Stir together 1 cup brown sugar and 6 tablespoons butter or margarine, beat till fluffy.

Add milk, beat till well blended; stir in coconut.

Spread over warm cake in pan.

Broil 4 inches from heat about 4 minutes.

Serve warm or cool.

Makes 12 servings.
