Chocolate Pound Cake with Cream Cheese Filling
1 c sweet butter
2 c sugar
4 eggs
2 t vanilla
1 4oz bar German Sweet Chocolate, melted
3 c flour, sifted
1/2 t salt
1/2 t baking soda
1 c buttermilk
Cream Cheese filling (recipe follows)
1/2 c chopped walnuts
In mixing bowl, cream together butter and sugar. Add eggs, one at a time, beating well after each addition. Blend in vanilla and chocolate.
Sift together flour, salt and baking soda and add to creamed butter mixture alternately with buttermilk, beginning and ending with dry ingredients.
Prepare cream cheese filling. Pour half of cake batter into 10-inch tube pan and sprinkle 1/4 c walnuts on top. Pour cheese mixture over walnut layer, then sprinkle on remaining walnuts.
Pour in remaining batter. Bake in preheated 300 oven for 1 hour, 35 minutes, or until cake tests done. Cool in pan 10 minutes before removing. Cool cake completely before frosting.
Prepare glaze. Spread over cake.
CREAM CHEESE FILLING
1 8 oz. cream cheese, softened
4 T butter
1/2 c sugar
2 eggs
2 T flour
1 t vanilla extract
Cream cheese and butter together in a bowl. Add sugar, eggs, flour and vanilla. Mix well.
GLAZE --- I DO NOT PUT GLAZE ON; INSTEAD I USE POWDERED SUGAR ON THE TOP OF THE CAKE.
1/4 c butter
1/2 c brown sugar
1/2 c shredded sweetened coconut
1/2 c chopped walnuts
1 T half-and-half
In a small saucepan melt butter. Blend in sugar, coconut and walnuts. Mix well. Stir in cream and continue to heat 1 minute.
