Cake Chocolate cake/Muffin/Bar (Low Carb)

Chocolate Cake/Muffin/Bar Substitute

2/3 Cup 100 Soy protein isolate (zero grams)
3 Tablespoons Hershey's Cocoa (9 carb grams)
3 large eggs (3 carb grams)
1 teaspoon baking powder (1 carb gram)
1/4 Cup vegetable oil (zero carb grams)
1 Tablespoon melted peanut butter (3 carb grams)
4 packets artificial sweetener (4 carb grams)
1/4 Cup water


Preheat oven to 325 degrees.

Put dry ingredients in a medium bowl.

Mix oil and eggs in separate bowl.

Melt peanut butter and drizzle over dry ingredients.

Add oil and eggs and stir with a fork until blended.

Add water a couple tablespoons at a time and fold with rubber spatula until you have a smooth
but thick pasty consistency.

Pour into either a loaf pan or muffin tins and bake for approx 15 minutes.

For variations, try adding some walnuts, almond extract or melt a combination of peanut butter and cream cheese for icing.

Or drizzle some Howard's Pancake Syrup on top.
