Cake Cranberry Orange Carrot

CRANBERRY-ORANGE CARROT CAKE

1 box cake mix (spice cake)
1/3 cup applesauce
3 eggs
1 cup water
2 cups carrots, grated
1/2 cup cranberries or golden raisins, dried
2 teaspoons orange peel, grated

Preheat oven to 350 °F. Grease two 8- or 9-inch cake pans. Combine applesauce, cake mix, eggs, and water. Beat at low speed for 1 minute, then continue beating at medium for 2 minutes. Stir in carrots, cranberries, and orange peel. Pour batter into pans. Bake until toothpick inserted in center comes out clean (about 30 to 35 minutes). Cool in pan for 10 minutes, then turn out onto rack to cool
completely.
