Crown Jewel Cake

1 pkg. raspberry gelatin
1 1/2 cup hot water
1 pkg. strawberry gelatin
1 cup hot pineapple juice
4 Tbsp. sugar
1 pkg. cherry gelatin
1 1/2 cup hot water
3 pkg. Lady Fingers
1 pt. heavy cream, whipped


Dissolve one package raspberry gelatin in 1 1/2 cups hot water. Dissolve one package cherry gelatin in 1 1/2 cups hot water. Pour each mixture 1/2-inch thick into separate shallow pans. Chill until firm.

In the meantime crush one package lady fingers. Blend with 1/4 cup softened butter. Pat this mixture on bottom of spring form pan. Stand upright the contents of two packages of lady fingers around the sides of the spring form pan (forming somewhat of a crown shape).

Blend one package of strawberry gelatin and 1 cup hot pineapple juice together. Dissolve 4 tablespoons sugar into this mixture. Cool until slightly thickened (about consistency of egg whites). Fold into two cups of whipped heavy cream.

Cut raspberry and cherry gelatin into 1/2-inch cubes. Fold these gently into whipped cream mixture. Pour gelatin whipped mixture into prepared pan.

Chill 4 hours.
