Cupids Jelly Rolls

3large eggs
1 cup of sugar
1/3 cup of cold water
1 tsp.vanilla
1 cup of flour
1 tsp.baking pwd.
1/4 tsp.salt
icing sugar
1 cupof red jam

Beat eggs until thick and fluffy,gradually add sugar
beating well after each addition,beat in water & vanilla
Add flour,baking pwd.and salt and beat until smooth

Divide in two between two 15x10x1 inch jelly roll pans
( I use cookie sheets )which have been greased and
lined with wax paper there will be just enough batter to line the bottom of the pans,they should be very thin when
baked.

Bake cakes one at at atime in a 375 degree oven for 8
minutes.

Loosen each cake from sides of the pan as soon as its
baked,then sift icing sugar generously over the top and
turn out on a tea towel.

Roll up loosley from narrow end and cool on rack.

Unroll the two cakes when cool and trim crusts then cut
each lengthwise into two strips,then cut each strip
crosswise, you should end up with 24 pieces.

Spread each with a scant tbsp.of raspberry jam or lemon
curd and roll up like a tiny jelly roll.
