Dutch Apple Cake

3 medium tart apples, peeled, cored and sliced — inch thick
1 cup plus 3 tablespoons sugar, divided
1 teaspoon cinnamon
2/3 cup butter, softened
4 eggs
1 teaspoon vanilla
2 cups flour
1/8 teaspoon salt


Heat oven to 300 degrees.

In a bowl combine the apple slices, three tablespoons sugar and cinnamon. Let stand 1 hour.

In a mixer, cream the butter and remaining sugar. Add eggs one at a time, mixing well after each addition. Add vanilla. Add flour and salt and beat until smooth.

Pour batter into 9-by-5-by-3-inch loaf pan. Push apple slices vertically into batter. Bake for 1 hour, 40 minutes. Cool 10 minutes on wire rack. Remove from pan and sprinkle with powdered sugar.

Serves 10 to 12.
