Cake: Eggnog Cake

Festive Eggnog Cake

2 cups flour
1 1/2 cups sugar
1 Tbsp. baking powder
1 tsp. salt
1/4 tsp. ground nutmeg
3 eggs
1 tsp. vanilla
1 cup eggnog
1/2 cup butter, softened


Preheat oven to 350 degrees F and grease and flour the bottoms of two 9-inch pans.

Combine all ingredients in a large mixing bowl. Blend well at low speed of electric mixer. Pour batter into pans. Bake at 350 degrees for 25 to 30 minutes or until cake springs back when lightly touched in center. Cool. Fill and frost with Eggnog Frosting.


Eggnog Frosting:
1/4 cup flour
1/4 tsp. salt
1 cup eggnog
2/3 cup butter, softened
1 cup sugar
1 tsp. vanilla


Combine flour, salt and eggnog in a small saucepan. Cook over low heat, stirring constantly until very thick. Cool. Gradually cream butter and sugar. Add flour mixture; beat until light and fluffy. Blend in vanilla.
