Eggnog Cake

3 tablespoons softened butter
1/2 cup sliced almonds
1 2 layer-size yellow cake mix
1/4 to 1/2 tsp nutmeg
2 eggs
1 1/2 cups eggnog
1/4 cup butter -- melted
2 tablespoons rum or 1/4 tsp rum flavoring

Generously greased Bundt pan with 3 tbl. softened butter. Press almond against sides and bottom. In large bowl,
combine cake mix, nutmeg, eggs, eggnog, 1/4 cu melted butter and rum. Beat until smooth, about 4 min. Pour into pan. Bake at 350 degrees for 45-50 min. Cool in pan 10 min. Invert to wire rack and cool completely.

Eggnog Layer Cake

2 1/3 cups flour
1 tablespoon baking powder
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
2/3 cup butter or margarine -- softened
1 1/2 cups sugar
3 egg yolks
1 cup dairy or canned eggnog
3 egg whites

Creamy Eggnog Frosting
2/3 cup sugar
3 tablespoons flour
1/4 teaspoon ground nutmeg
1 cup eggnog
2 egg yolks -- beaten
1 tablespoon rum ( or 1 tbl. milk or eggnog and 1/4 tsp
rum extract
1 cup butter (no substitute) -- softened

Sugared Cranberries

Cake:
Grease and lightly flour two 9x1-1/2" or 8x1-1/2" round baking pans. Stir together flour, baking powder, nutmeg
and salt in a med. mixing bowl.

Beat butter or margarine in a large mixing bowl with an electric mixer on med. speed for 30 seconds or till
softened. Add sugar; beat well. Add egg yolks, one at a time, beating well after each, till combined. Alternately
add flour mixture and eggnog, beating after each addition, just till combined.


Wash beaters thoroughly. Place egg whites in a med. mixing bowl; beat with mixer on med-high speed till stiff peaks form (tip stand straight). Gently fold whites into the batter. Pour mixture into prepared pans.

Bake in a 350 degree oven for 25-30 min. for 9" cake pans (30-35 for 8") or till test done. Cool cakes in pans on wire rack for 10 min. Remove cakes from pans; cool completely. Fill and frost with Creamy Eggnog Frosting. Garnish with Sugared Cranberries, if desired.

Creamy Eggnog Frosting:

Combine sugar, flour, and nutmeg in a med. saucepan. Add eggnog. Cook and stir over med. heat till mixture is
thickened and bubbly. Remove from heat. Gradually stir hot mixture into egg yolks.

Return to saucepan. Bring to a gentle boil; cook and stir 2 min. more. Remove from heat. Add rum. Pour mixture into a boil. Cover with clear plastic wrap.

Cool to room temp. without stirring. Beat softened butter in a med. bowl with a mixer on med. to high speed about 30 second or till fluffy. Add cooled cooked mixture, 1/4th at a time, beating on low speed after each addition, till smooth.

Sugared Cranberries: Dip cranberries, as desired, in lightly beaten egg white, then roll in granulated sugar. Set aside to dry.

Refrigerate frosted cake.
