Elegantly Easy Apple Cake

3 cups peeled tart apples, sliced 1/4 inch thick
2 tablespoons lemon juice, divided
1 cup + 3 tablespoons sugar
2/3 cup butter or margarine, softened
4 eggs
1-1/2 teaspoons vanilla
2 cups flour
1/8 teaspoon salt


In a bowl combine apples, 3 tablespoons sugar and 1-1/2 tablespoons lemon
juice.

Let stand for 1 hour in refrigerator.

Preheat oven to 300° F. and grease a 9x5x3” loaf pan.

In another bowl; cream butter and remaining sugar.

Add eggs 1 at a time, beat well after each addition.

Add vanilla and remaining lemon juice.

Combine flour and salt; add gradually to creamed mixture and beat till
smooth.

Pour into loaf pan.

Drain apples and reserve liquid.

Push apple slices gently into batter with back of a spoon, placing them close together.

Bake for 45-60 minutes or till toothpick inserted near middle comes out clean.

Upon removing from oven drizzle remaining juices over cake.

Cool for 10 minutes on a wire rack, remove from pan.

Serve warm, topped with whipped topping, if desired.
