Fat Pork Cake
1 lb. fat pork, ground
2 tsp. soda
2 tsp. cinnamon
2 tsp. nutmeg
2 tsp. cloves
2 tsp. allspice
3 eggs
3 cups sugar
2 cups sweet milk
5 cups flour
1 lb. pecans, broken
1 lb. raisins
Dredge raisins and pecans in 1 cup of the flour. Cream fat and sugar. Beat eggs in. Sift flour, soda and spices. Add the milk and flour alternately. Add pecans and raisins. Bake in tube pan in slow oven.
Pork Cake
1 lb. fat pork
1 lb. walnuts
1 lb. raisins
1 Tbsp. soda
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. allspice
1 pt. coffee
4 cups brown sugar
7 cups plain flour
Pour boiling coffee over meat. Stir until fat is melted and add brown sugar to meat and coffee. Add all dry ingredients together and sift together. Add nuts and raisins to flour. Add a small amount at a time and mix well.
Pork Cake
1 lb. fresh ground fat pork
1 lb. raisins
1 lb. English walnuts (or black)
4 cups brown sugar
1 Tbsp. cinnamon
1 Tbsp. nutmeg
1 pt. strong coffee, black
1 tsp. salt
1 tsp. soda
2 1/2 cups plain flour
Mix all this together in a very large bowl. Mix well. Bake at 350 degrees for 2 hours. Soak in grape juice. The longer you soak the better it is.
Fruit Cake
1/2 lb. ground fat pork
1 1/2 cups boiling water
2 1/2 cups brown sugar
3 cups nuts
1 lb. white raisins
1/4 lb. citron
1 tsp. nutmeg
3 cups flour
1 tsp. soda
1/2 tsp. salt
1/2 tsp. cloves
1 tsp. cinnamon
1 cup coconut
Pour boiling water over fine ground fat pork. Let stand until cool. Add sugar and stir until dissolved. Chop nuts and add to 1 cup of the flour with the other fruit, coconut, salt and spices. Add to first mixture with remaining 2 cups flour. Bake in a tube pan 2 1/2 hours at 300 degrees. Delicious fruit cake.
