Fresh Strawberry Cake
1 c. butter or margarine
2 c. sugar
3 c. all-purpose flour
4 tsp. baking powder
1 c. milk
4 eggs
1/4 tsp. salt
1 tsp. vanilla
Cream butter and sugar. Add eggs, one at a time, beating well after each addition. Sift together the flour,
baking powder and salt. Add to first mixture alternately with the milk and vanilla. Pour into greased cake pans. Will make three layers or 36 cupcakes.
Bake in 350 degrees oven for 25 to 30 minutes.
Strawberry Cake Filling And Topping:
2 layers cake (can use 3 layers)
1 1/2 qt. fresh strawberries, sweetened to taste
2 c. sugar
1 pt. heavy whipping cream
4 Tbsp. sugar
3/4 tsp. vanilla
Cake must be cool. Let strawberries and 2 cups sugar stand until juicy. Spread a layer of berries and juice on first layer of cake. Cover with whipped cream to which sugar and vanilla have been added. Continue with second layer in same manner, carrying the whipped cream down over sides of cake.
Store in refrigerator. Should be very cold. Make 24 hours ahead. To use 3 layers, simply increase berries and cream.
