Cake Gingerbread by Laurel

Gingerbread

-Mix Dry Stuff in One Bowl
-Mix Wet Stuff in Another Bowl

-Spray cooking spray (I used 'I Can't believe it's not Butter pump spray) into a nice tart pan, round cake pan or something similar

-Sprinkle 1/4 cup brown sugar over the sprayed pan

-Arrange fruit in a nice wheel shape - or whatever works. The recipie called for 1 1/2 cups sliced peeled Granny Smith Apples. I used 2 -3 very ripe pears (peeled) - pears taste yummier . Then I sprinkle a bunch of fresh cranberries (ok from a bag in the freezer) over the pears. Dried ones might be a little sweeter but the fresh ones are very pretty and nice and tart. The pears gave it an excellent flavor. (Plums might work well also)

-Combine Wet stuff Bowl with Dry Stuff Bowl and bake at 350 degrees untill fork clean, about 30 minutes. By mistake we baked it at 400 degrees and it simply baked faster and tasted fine. What a forgiving combination!

Dry Stuff Bowl:
1 1/4 cups flour
1/3 cup oatmeal (dry uncooked rolled oats stuff)
1t baking powder
3/4 t cinnamon
1/2 baking soda
1/4 t nutmeg
1/8 t salt

Wet Stuff Bowl

1/4 cup buttermilk (lowest fat you can find. I used 1 1/2 %)
1/3 cup sugar
1/3 cup packed brown sugar
1/2 cup mashed bannana (we had one normal sized one around and it made the right amount)
1 t vanilla (I sloshed it in and probably used more. Made it very flavorful)
1 egg white
1/4 cup orange juice
