Holiday Chocolate Crème de Menthe Cake
1 (2-layer) white cake mix plus ingredients needed on pkg.
Approximately 7 Tblsp. green creme de menthe liqueur ,divided
1 (8 oz.) Carton Cool Whip whipped topping, thawed
1 can Hot Fudge topping (like you put on ice cream)
Prepare cake according to package directions, except substitute 4 tbl. green crème de menthe plus water to equal water asked for on package.
Bake according to package directions and cool completely.
Stir fudge topping before using; if necessary, heat it in microwave for about 15-20 seconds first.
Frost cooled cake layers with fudge topping. Let cool for 10 minutes.
Stir remaining 3 Tblsp. creme de menthe into Cool Whip and mix well.
Use this mixture to frost cake a second time over top of fudge layer and on sides of cake.
Refrigerate cake until ready to serve.
Yield: 10-12 servings.
Note: garnish cake with chocolate leaves or chocolate curls if desired.
